Ah....... bagna cauda, possibly the only time you will ever use dieletto piemontese (the Piedmont dialect spoken in parts of Northern Italy). I just returned from living 5 years in Piemonte where everyone over the age of 30 in my village spoke dieletto as their first language and I know a few old people there who don't speak Italian at all. It is a language all it's own and incomprehensible to those who speak Italian only. Bagna caquda is wonderful and I hope you will encourage those who might be put off by the ingredients to give it a try.
